Our taco tortillas are made with just one ingredient: heirloom Mexican corn. ⠀⠀

Our friends at @masienda partner with traditional farmers in Oaxaca, Mexico to grow the most flavorful and highest quality non-GMO corn from farmer-preserved heirloom seeds.⠀⠀

Once the corn is harvested and dried, they send it to our friends at Nixtamal, right here in New York City. The corn then goes through a process called Nixtamalization, which is the ancient Mesomerican process of steeping corn kernels with an alkaline ingredient (e.g., slaked lime, ash, etc.). This process softens the corn and makes the nutrients available for us to digest. The kernels are ground by stone, then formed into disks and cooked. Finally, they're delivered fresh each morning to our restaurants for you to enjoy.⠀⠀
