Matcha strawberry red bean Mochi 💚
I am back from our trip to Seoul 🇰🇷 with full of inspiration ☺️ Strawberry red bean Mochi is our favourite street food in Seoul. I made my easy version of matcha Mochi, it’s so soft, chewy, not overly sweet and delicious! Hope you’ll enjoy the recipe 💕 Happy Monday! .
Recipe makes 12
Red bean paste
1 cup red bean, soaked overnight
3 cups water
1/4 cup sugar .
1 1/2 cups glutinous rice flour
1/4 cup sugar
2 tsp matcha powder @ceresorganics
1 cup water
1/3 cup cornstarch .
12 fresh strawberries .
Drain soaked red beans, add water in a pot along with the beans. Cook beans until soft. About 1 hour. Smash beans with a spatula. Add in sugar and heat over low to cook off extra water until form a paste texture. Keep stirring during the process. Transfer beans paste to a food processor and process until smooth. Wrap with plastic wrap and keep in the fridge for 2 hours before using.
Combine the rice flour, matcha powder, sugar in a microwave safe mixing bowl. Whisk it well. Add in water and mix until combined. .
. Put the bowl into a microwave, heat it up for 1 minute. Take the bowl out and stir the mixture around with a heatproof spatula. Back into the microwave and heat it up for 1 min. Remove the bowl from the microwave. Keep stirring with the heatproof spatula, until it thickens and comes together into one smooth. .
Lightly flour work surface with cornstarch. Put the mochi on top (Put some starch on your hands to prevent sticking) Cut the mochi into 12 pieces. Flatten the mochi into a circle. (Feel free to use more corn flour if needed) .
Wrap the strawberries with red bean.
Put some starch on hands. Then place flatten mochi dough and put the covered strawberry on top of it (with the tip facing down) Wrap it with pinching the bottom closed. .
Anyone else craving fajitas after staring at this photo? Great news, this flavor-filled dish is easy to make, and healthy, too! 🍤🥑 To recreate at home, start by preheating the oven to 204 degrees Celsius. Chop four bell peppers, two medium red onions, three jalapeños, and three celery stalks and set aside. In a bowl, whisk the juice of three limes with 1/3 cup of olive oil, 1/4 teaspoon chili powder, 1/4 teaspoon cumin, 1/2 teaspoon garlic powder, 1/2 teaspoon paprika, and salt and pepper to taste. Take half of the mix and pour into a bowl with one pound of cleaned shrimp; set aside to marinate for 15 minutes. Take the vegetables and lay them across a sheet pan, drizzle the remaining marinade on top, and bake in the oven for five minutes. Remove the sheet pan from the oven, add the marinated shrimp to the pan, and place back in the oven to bake for another five to eight minutes — keeping an eye on the shrimp so they don’t overcook. Remove the pan from the oven and serve with tortillas, sliced avocado, and sour cream. Tag a friend to make this with this week. (📷: @theendlessmeal 📍: New York, #NewYork ) #beautifulcuisines ...
