Vegan Cajun Roasted Cauliflower with Chimichurri Sauce 🧡💚while it’s still the year of the cauliflower, here’s another spin on cauliflower ‘steaks’ with cajun flavors by @veganricha. It’s gluten-free, nut-free and takes 30 minutes to make. If you have your own cajun spice blend it’s even faster, otherwise check the mix below.

Ingredients:
⠀
Cajun Cauliflower:⠀
1 small head of cauliflower , sliced into 1/2 inch thick slices or chopped into medium size florets
2 tsp oil
1 tsp lemon juice
salt to taste

Cajun Spice Blend (2 tbsp):
2 tsp sweet paprika
1/3 tsp cayenne
1/2 tsp black pepper
1 tsp oregano
1.5 tsp garlic powder
1/2 tsp thyme
1/2 tsp onion powder
dash of pepper flakes⠀
—
Chimichurri sauce:⠀
1 cup packed parsley, chopped⠀
1/4 cup basil (or cilantro) packed
6 cloves of raw garlic
2 tbsp extra virgin olive oil⠀
juice of 1 lime⠀
1 tsp vinegar apple cider (or balsamic or red wine vinegar)⠀
1/4 tsp salt⠀
1/4 tsp black pepper⠀
2 tbsp or more avocado for creamyness (optional)⠀
⠀
Instructions⠀
* Slice the cauliflower or chop into florets. Blend the chimichurri sauce with a few tbsp of water and set aside. Line a baking dish with parchment. Preheat the oven to 425 deg F ( 220 C )
* Rub oil and lemon juice all over the slices or florets.
* Sprinkle the cajun spice + salt on both sides of the slices and rub lightly. Then sprinkle more on the open side. (If using florets, sprinkle spice + salt, then toss well to coat). For crispiness, mix 2 tbsp breadcrumbs in the spice mix and salt and then sprinkle all over.
* Spray oil lightly on the spiced cauliflower to seal the spices in, Bake at 425 deg F for 20 to 25 mins. Broil for a minute to sear if needed.
* Cauliflower tends to soften depending on the moisture content after cooking. So serve immediately. Sprinkle some more spice if needed. Cajun can be hot, so add another cooling dressing of choice if needed.
* Serve with chickpeas, beans, grains, add to wraps etc.

1 medium-sized cauliflower head
2 Tbsp olive oil
1/2 tsp sea salt

Miso-Tahini Sauce:
3 Tbsp tahini
1 tsp brown rice miso
1 tsp lemon juice
1 tsp date syrup
5-6 Tbsp water (depending to desired consistency)
—•—Method—•—
1.Wash your cauliflower and trim the leaves so that it stands straight.
2.Fill a large pot with water (until ¾ full) and bring to boil. Once boiling, carefully add in the whole cauliflower head. Boil for 10-12 minutes (depending on the size of your cauliflower) and drain when done.
3.Preheat your oven to 200°C/390°F and line a baking sheet with paper.
4.Place your cauliflower on the sheet and gently massage the olive oil into the head. Sprinkle some salt on top and bake in the oven for 7 minutes.
5.In the meantime prepare your miso sauce by mixing all ingredients together. Take the cauliflower out of the oven and gently brush the sauce on top and the sides. Place back into the oven and bake for another 7-10 minutes until golden brown on top.

Cauliflower steaks:
Slice through center of cauliflower after removing outer stems and leaves. Make a few slices about 1/2 inch thick. Brush both sides of ‘steaks’ with olive oil. Sprinkle with favorite herbs/seasonings and bake on parchment-lined baking sheet at 400F about 20-25 minutes (or until start to brown), flipping half way.

Tomato pesto pasta recipe:
4 minced garlic cloves
4 green onions
fresh grated ginger
4 tomatoes
1/4 cup unsalted tomato paste
1 tbsp tahini
2 tsp miso
1 tbsp sriracha
1 tbsp toasted sesame oil or olive oil
handful chopped fresh basil
2 tbsp pine nuts (optional)
1/3 14-oz packet firm tofu (optional)
1 tsp maple syrup (optional)

Heat 2 tbsp olive oil in medium saucepan. Sauté 4 minced garlic cloves, 4 chopped green onions (white parts only) and 1 tsp grated fresh ginger on medium-low heat for about 45 seconds.

Add 4 chopped tomatoes and sauté on medium-high until most of the liquid has been absorbed and they start to stick to the pan a little. Add 1/4 cup unsalted tomato paste and 1 tsp maple syrup (optional). Mix while heating a few more minutes until starts to stick again.

Transfer to food processor along with 1 tbsp tahini, 2 tsp mellow miso, 1/3 of a 14oz packet firm tofu (optional), 2 tbsp pine nuts (optional), a handful of chopped basil leaves, 1 tbsp sriracha, squeeze lemon, 1 tbsp toasted sesame or olive oil, salt to taste. Process until consistency of a thick spread. Transfer to bowl and add pasta to taste. Add more olive/toasted sesame oil if dry.

Seared cauliflower with harissa spiced glaze. FANCY ~30 min meal for 2. Vegan, plantbased, gf by @evergreenkitchen_:

Ingredients (for 2): Cauliflower steaks & cauliflower mash:

1 1/2 lb head of cauliflower (0.7 kg)
3/4 cup + 2 teaspoons water (plus extra, to thin), divided
1 large clove garlic, minced
1 tablespoon lemon juice*
1 tablespoon + 2 teaspoons olive oil
1/4 + 1/8 teaspoon salt, divided
1 tablespoon maple syrup
3/4 teaspoon paprika (sweet)**
3/4 teaspoon cumin
3/4 teaspoon coriander
1/4 teaspoon smoked paprika**
1/8 teaspoon cayenne

STEPS:
Peheat oven to 425°F. Line a baking sheet with parchment paper. 
With the cauliflower sitting on its stem, use a knife to slice it in half. Cut one thick slice from either side so that you have two “steaks”.

Gather up all the remaining cauliflower pieces and chop finely (or pulse in a food processor/blender).
.
Heat a large skillet pan, filled with 3/4 cup water, over high heat. Once boiling, add finely chopped cauliflower and cover to steam. Cook for 5 minutes. Remove lid, add minced garlic, and saute for 3-5 minutes, or until water is evaporated and cauliflower pieces are tender. Transfer to food processor. Add lemon juice, then process until cauliflower starts to break down. Slowly drizzle in 1 tbsp of olive oil & ¼ teaspoon salt. Process until the mixture looks like the consistency of mashed potatoes.

Re-heat the same skillet over medium-high heat. Add 2 tsp olive oil, and once hot, add cauliflower steaks. Let them sear for 3-3 ½ minutes on each side (~6-7 minutes total). Remove once they’ve developed a golden crust on either side.

While the cauliflower cooking you can assemble the harissa glaze. In a small bowl combine 2 tsp water, maple syrup, paprika, cumin, coriander and smoked paprika. Once the cauliflower is seared, transfer steaks to lined baking sheet. Brush harissa glaze on both sides, coating all the nooks and crannies. Transfer to oven for 5-7 minutes or until tender.

If you need a last minute *super easy* valentines day recipe idea, how about some Herb Crusted Cauliflower Steaks? 😻 Tender on the inside, crispy and so flavourful on the outside! I feel like this is one of those meals that looks like you put in a lot of effort but really it's probably the easiest (and cheapest 😂) meals to make. And anything served with quinoa, rapini or asparagus becomes x2 more fancy. And yes... the roasted garlic aioli steak continues- probably my current condiment obsession. Today's dinner: Cauliflower steak with potatoes, gravy and bimi. It was so yummy!

For the cauliflower I made a marinade from olive oil, bbq sauce, soy sauce, onion powder, garlic powder, paprika, salt and pepper. I cut the cauliflower in thick slices, covered in marinade, and fried in a pan. 
For the gravy I used vegetable stock, miso paste, green onion, salt and pepper, and corn starch to thicken.

the only thing I love more than cauliflower is purple cauliflower. 💜💜💜
this is such a quick meal to throw together, it's in constant rotation in my house. if you've never tried cauliflower steak, here's your chance-- -
1.) slice a head of cauliflower (any color you wish) into 1 1/2 inch slices. -
2.) place on cooking sheet and coat with oil (I use avocado). -
3.)Sprinkle with garlic, pepper, Himalayan salt, and any other seasonings your heart desires. -
4.)Pop that cauliflower in an oven preheated to 400F for 20-30 minutes, flipping halfway through cook time. 
I chose to douse mine in Trader Joe's zough sauce (seriously tasty, seriously spicy herb sauce) and some baby cilantro. 👍🔥.

Cauliflower steak! I see your face with question marks😉You are like: W?H?A?T?! Yes, steak could be no beef! I tried this when I was in Pittsburgh, in the restaurant called City Works! Fantastic food and beer selections 😅😉 When I ordered it I saw the hesitation on the waiter’s face. He tried hard to pick the words and kindly gave me a heads up that it is not a 🥩steak “yay I read the menu.” I replied with smile😊 it kind of amused me and my boyfriend how many people would order it and end up with an either surprised😲 or angry😠 face 🤣😝
This is a fancy but practical way to eat cauliflower. I picked up the green cauliflower, seasoned with paprika, garlic powder, turmeric, dried parsley, salt and pepper. In 400F oven for 18mins. Combined with homemade cilantro chutney and pickled capers it is just yummy yummy! Enjoy your Friday! Love and light💕

Cauliflower steak:
• cuci bersih kembang kol, wortel & buncis
• panaskan oven 250°c selama 10menit
• lumuri kembang kol, wortel dengan olive oil, himsalt & blackpaper (takaran secukupnya)
• masukkan kembang kol & wortel ke oven, panggang selama 10menit suhu 250°c, setelah 10menit keluarkan dan balik kembang kol & wortelnya, kemudian masukkan buncis, panggang lagi selama 10menit

Saus:
• kupas bawang bombay (potong

Cauliflower steak: • cuci bersih kembang kol, wortel & buncis • panaskan oven 250°c selama 10menit • lumuri kembang kol, wortel dengan olive oil, himsalt & blackpaper (takaran secukupnya) • masukkan kembang kol & wortel ke oven, panggang selama 10menit suhu 250°c, setelah 10menit keluarkan dan balik kembang kol & wortelnya, kemudian masukkan buncis, panggang lagi selama 10menit Saus: • kupas bawang bombay (potong") & bawang putih (potong halus) • kemudian tumis hingga harum dng olive oil, masukkan tepung 1sdm, tambah air secukupnya, aduk hingga mengental • tambahkan himsalt, blackpaper, kaldu jamur (totole), saus sambal (saya pakai saus sambal bambu rejeki, saus sambalnya vegetarian, diantara semua saus sambal, menurut saya ini yg paling enak & pedesnya beneran), tambahkan saus tomat & saus tiram.
