Los garbanzos son mi legumbre favorita en el mundo (y cuando chica los odiaba 😪), es que se pueden preparar de tantas formas y siempre queda rico y diferente, como si fuera otro ingrediente. Así que aquí les dejo la receta de esta maravilla crujiente por fuera, y cremosa por dentro 🤩.

Ingredientes:
-1 1/2 taza de garbanzos crudos remojados toda la noche, al menos 8 horas.
-1/2 cebolla grande.
-1 diente de ajo.
-1 puñado grande de cilantro.
-3/4 taza de harina de garbanzo y/o avena.
-1 cucharada de comino (hay que ir probando, a mi me gusta con mucho sabor a comino).
-Sal a gusto.
-1/4 taza de almidón de maíz o de tapioca.
•
—Procesar los garbanzos, hasta que queden cremosos y agregar todos los ingredientes menos el almidón, y refrigerar por unos 15 minutos.
—Con las manos ir haciendo bolitas medianas y pasarlas por el almidón.
—Freír las bolitas en abundante aceite y comer los falafel calientitos.

Lemon Miso Mustard Quinoa just sounds amazing right, and I can confirm that it tastes glorious 🤤 I paired it with some fragrant veggies and chickpeas, sauteed kale and homemade beetroot hummus 🙌🏻 What is your favourite way of eating quinoa?

Lemon Miso Mustard Quinoa with Veggies & Chickpeas:
1/2 cup quinoa
1 cup water
1 tbs lemon juice
Pinch of black pepper
1 tsp miso, 1/2 tsp mustard
1 sliced shallot
1 minced garlic clove
2 sliced mushrooms
1/2 diced bell pepper
1/4 chopped broccoli
1 tin chickpeas
1 tbs soy sauce
1 tsp smoked paprika
Pepper
Handful of kale
1/2 tsp garlic powder
~Add the quinoa to a pot with the water and lemon juice and pepper
~Bring to a boil, then reduce to a simmer and let i cook for 15 minutes. Once cooked stir through the miso, mustard and some of the kale
~Fry the onion for a few minutes
~Add the gatlic and mushrooms and fry for a few more minutes
~Add the rest of the ingredients and fry until everything is heated through
~Sautee the kale with some garlic powder
~Serve everything with some hummus and dig in!

🌱Recipe rosemary crusted hasselbacks: scrub 3 large potatoes and dry. Peel. Lay a chopstick down lengthwise along side of potato and cut slits 1/4-1/8 inch wide down to chopstick level along potato. Do this for all 3. Place potatoes on baking sheet and brush generously (tops and bottoms) with extra virgin olive oil + sprinkle with salt, pepper and a generous amount of dried (or some freshly chopped) rosemary leaves. Roast at 425F about 30 minutes. Remove from oven and brush again with more extra virgin olive oil, trying to get some into the slits. Roast for about another 30 minutes until edges are crispy and middle is easy to pierce with pairing knife. 🌱Recipe roasted chickpeas: In a large bowl, combine 2 cups cooked chickpeas, 2 tbsp extra virgin olive oil, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp smoked paprika, 2 tsp chili powder, pinch cayenne, salt to taste. Roast on parchment-lined baking sheet at 400F about 15-20 minutes, giving them a good shake half way through.⠀

Here is my recipe: leave the chickpeas over night in the cold water (best 24 h.) then cook it with onion garlic bay leaf and even carrots 🥕 pressure cook for 45 min or until tender, if you don’t have pressure cook then it will take you around 2 hours, extract the onions and garlic, then mix the chickpeas with one spoon of tahini paste fresh garlic, salt, lemon 🍋 juice, olive oil and even parsley once smooth purée obtained serve with cooked chickpeas olive oil, zaatar, paprika, lemon juice, parsley and whatever your imagination tells you! You can find this recipe in my YouTube channel enjoy!.

5. Check if the texture is super smooth and creamy, if not - add 1 additional ice cube or a couple of tbsp of ice water, you may have to add both depending on the texture of your chickpeas.⁣
6. By now you should have the creamiest super smooth hummus, add more salt to taste if needed.⁣
7. Serve your hummus with a drizzle of olive oil and some colorful toppings (see suggestions above for what I used this time)!⁣
