Not as much as I would have liked. It’s really difficult for me to not get caught up in the “products” of my work, but I’m trying to be better about recognizing small accomplishments. 👏🏼 I reviewed my course. It’s good to go. And now I can publish it so my students can get oriented to their semester. That’s a victory and I’m calling it a win. 🥇 I also had this bomb salad for lunch.

▶️ In my @ukonserve container: romaine lettuce + roasted red potatoes (sprayed with @chosenfoods avocado oil then seasoned with garlic, dill, salt & pepper - 450 F x 30 min) + tomatoes + onion + cucumber + Greek chicken skewer (chicken thighs marinated in lemon, garlic, olive oil, red pepper, & salt then skewered and grilled) + @fage greek yogurt dip (2% Greek yogurt mixed with @primalpalate ranch seasoning)
