Classic Falafel

Usually when I make falafel I follow a different recipe, which involves the use of cooked chickpeas and I cook them in the oven.
I don't like to fry, I never do it, that's why every time I do it I'm always very worried, but this time I have to say that I was really proud of myself!
I followed the recipe given to me by a gentleman who, about twelve years ago, had a small kebaberia in Venice, close to the Ca'd'oro, near where I used to live.
At the time I was vegetarian and I was still one of the few customers, perhaps the only one, who went there exclusively for those fantastic falafels.
The last period before selling his business, the man of the kebab no longer prepared the falafels and perhaps pity the obvious expression of disappointment on my face, he decided to confide the secrets of the preparation of these delights.
In transcribing the recipe I marveled at its simplicity, a few ingredients that I will now reveal to you too

- 400g dried chickpeas
- 2 onions cut into pieces
- 2 fresh garlic chopped (or 2 cloves) - 1 tsp cumin powder
- 1 Tbs of chopped fresh parsley
- 1 Tbs of chopped fresh coriander (optional) - 1 pinch of cayenne pepper
- grated peel of 1 lemon
- salt
- black pepper
- 1 liter of peanuts oil (for fry) .
Soak the chickpeas for 24 hours (I advise putting them in a pot with plenty of water, allowing the water to just come to aboil and soak them in the pot)
Dry the rehydrated chickpeas well with a clean towl (this step is quite important for the final result)
Put the dry chickpeas into a blender together with onion, garlic, cumin, pepper, lemon peel, salt and pepper, and blend
Add the chopped parsley and coriander and mix well
Spread the batter on a baking sheet, cover and put it in the fridge for at least 1 hour
Heat the oil to 170 ° C and in the meantime start to form balls slightly flattened 
Fry until golden brown

Los garbanzos son mi legumbre favorita en el mundo (y cuando chica los odiaba 😪), es que se pueden preparar de tantas formas y siempre queda rico y diferente, como si fuera otro ingrediente. Así que aquí les dejo la receta de esta maravilla crujiente por fuera, y cremosa por dentro 🤩.

Ingredientes:
-1 1/2 taza de garbanzos crudos remojados toda la noche, al menos 8 horas.
-1/2 cebolla grande.
-1 diente de ajo.
-1 puñado grande de cilantro.
-3/4 taza de harina de garbanzo y/o avena.
-1 cucharada de comino (hay que ir probando, a mi me gusta con mucho sabor a comino).
-Sal a gusto.
-1/4 taza de almidón de maíz o de tapioca.

—Procesar los garbanzos, hasta que queden cremosos y agregar todos los ingredientes menos el almidón, y refrigerar por unos 15 minutos.
—Con las manos ir haciendo bolitas medianas y pasarlas por el almidón.
—Freír las bolitas en abundante aceite y comer los falafel calientitos.

I forget how good buckwheat is because I never make it, but when I do I always wonder why I don’t prepare it more often. It’s so simple, yet very satisfying. Here I served it with falafels, roasted veg and a delicious tahini «vinagrette» 🤤

Roast Veg, Falafels & Buckwheat Bowl:
1/4 cup buckwheat groats
1 tsp veggie broth powder
1/3 chopped courgette
1 sliced mushroom
1 sliced carrot
1/4 chopped bell pepper
1/2 chopped broccoli
1 minced garlic clove
1 tsp minced ginger
1/2 tsp smoked paprika
Salt and pepper
@halsanskok Falafels
~Cover the veggies in the spices and add them and the falafels to a baking sheet and bake at 200°C for 20-25 minutes
~Add the buckwheat to a pot with the veggie broth and 3/4-1 cup of water, bring to a boil then reduce to a simmer and let it cook for 15-20 minutes
~Serve everything up with desired sauce. I mixed 1 tsp tahini, 1 tbs soy sauce and 1 tbs orange juice together and poured that over the top 🤤

La receta de los falafels la podéis encontrar en el perfil del gran @alvarovargas80 👌🏻

📝Ingredientes para el curri de calabacin:
-1 calabacin.
-1 puerro.
-1 diente de ajo.
-1 cucharadita de curri.
-1/2 cucharadita de cúrcuma.
-1/4 de vaso de caldo de verduras.
-AOVE.
-Sal
.
📝Preparación :
- Una vez lavado y troceado el puerro, po charlo en una sartén con AOVE.
- Añadir el ajo cortadito en láminas. Darle un par de vueltas hasta que se dore.
- Agregaremos el puerro que lo habremos cortado en cubitos y dejamos que se haga todo unos 10 minutos.
- Añadiremos el curri y la cúrcuma y movemos para que se integre bien.
-A continuacion vertemos el caldo de verduras y a fuego medio alto esperamos a que evapore el caldo.
