Happy Friday friends! I hope you all had a great week and are looking forward to the weekend!! This past week with the stress of finals and everything else going on, it really got me to thinking about this past year... the good, the bad, the hurt, the joy, and everything in between! A lot has happened this year and it definitely hasn’t been how I expected it! A couple of things that I learned is that adulting is hard, self care is SO important, friends can break your heart, it’s important to choose people who choose you and love can conquer all! I plan on going more in-depth about my reflection of 2019 soon! What has 2019 taught you guys?! 💕

GINGERBREAD SNICKERDOODLES☃️ Holidays aren’t complete without cookies and I can’t resist an easy delicious cookie recipe! I hope you all love this recipe as much as I do! Currently scrolling through my cookie recipe archives to find the perfect one to share at the work holiday party tonight🎄 Cheers to it finalllly being the weekend!♥️ .
1 1/2 cup cassava flour (can sub all purpose)
1/2 tsp baking soda
1 tsp cream of tartar
1 tsp cinnamon
1/2 tbsp ground ginger
1 stick salted butter, softened
1 tsp vanilla extract
1/3 cup coconut sugar
3 tbsp maple syrup .
Preheat oven to 350F
In a bowl, cream together the butter and coconut sugar
Add in the egg, vanilla and maple syrup and mix
In another bowl, mix together the flour, baking soda, cream of tartar, cinnamon and ground ginger
Add to the wet mixture and stir until fully combined
Refrigerate for 30 minutes
Make cinnamon sugar topping: 1/4 cup org cane sugar + 1 tsp cinnamon and add to a ziplock
Scoop and tightly roll dough into balls
Shake balls in ziplock or roll in cinnamon sugar topping
Add to parchment paper lined baking sheet and flatten with palm
Sprinkle more cinnamon sugar on top
Bake for 12 min
Allow cookies to cool and enjoy! ...

HAHA okay seriously though if you haven’t tried browned coconut butter you must. Its literally the most magical tasting ‘butter’ ever. Toasty, rich and slightly nutty.
I’ve been seeing so many ‘brown butter’ cookies it inspired me to make these browned coconut butter cookies!! And since sugared pecans are kinda hot right now why not throw some maple pecans in there too heh.
The result? Shortbread like moist cookies with some damn delicious flavours going on. It’s hard to describe you just gotta taste it 🤫
