when life speeds up, don’t forget to slow down just a little and take a deep breath. it might not be the easiest thing to do, but a clear head a calm state will make any hard task or busy schedule seem a little more doable.
-
as this next month gets filled with meetings, work, school prep, training, and relationships i know it’s going to be easy for me to get overwhelmed (especially as my little introvert self lol)
-
so i’m making a commitment to:
- journal every morning
- meditate/stretch for ten minutes every night before bed
- do one form of “self care” per day, even if it’s something tiny
-
i’m hoping this will help me make sure i’m in a good headspace and also taking care of ME even in the midst of all the things going on around me!

Looking for a fun way to incorporate more fiber and protein into your sweet treats? Try this CHICKPEA COOKIE DOUGH 🍪
⠀⠀⠀⠀⠀⠀⠀⠀⠀
I took a tip from @frommybowl and gave this a try and it was delicious 😋 It’s not overly sweet, light, and similar texture to cookie dough.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
I ended up using canned chickpeas which does leave a subtle lingering “bean” flavor  but you can also soak + cook your own chickpeas from scratch! Modified recipe below but you can find Caitlin’s full recipe on her blog.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
To make the CHICKPEA COOKIE DOUGH, you will need:
• 1 can organic chickpeas (drained, rinsed, and soaked in water 12 hours)
• 1/4 cup tiger nut butter (can sub cashew or almond butter)
• 1/4 cup organic maple syrup
• 1/4 cup organic almond flour
• 1 1/2 tsp vanilla extract
• Pinch of @redmondrealsalt
• 1/2 cup @enjoylifefoods dark chocolate chips
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Drain and rinse chickpeas and soak in a sealed container with water overnight (this helps to get rid of some of the excessive “chickpea taste). You can also soak and cook your own chickpeas if you don’t use canned!
⠀⠀⠀⠀⠀⠀⠀⠀⠀
In a large food processor, combine chickpeas, tiger butter, almond flour, maple syrup, vanilla, and sea salt. Pulse blend until texture is smooth (you may need to use a spatula to move content around).
⠀⠀⠀⠀⠀⠀⠀⠀⠀
One blended and smooth, fold in dark chocolate chips and serve! Store in the fridge up to 4 days. Enjoy!.

One Sheet-Pan Garlic Butter Salmon + Red Potatoes 🍋😍
{ This salmon recipe is super quick to put together and even faster on the clean-up duty, thanks to our one-sheet pan method. We love serving this salmon for a quick dinner, but it's equally as great for prepping ahead a few lunches to take with you as your food prep throughout the week. Feel free to double or triple this recipe to fit your family size...just use 2 large sheet pans instead, so there isn't any overcrowding because those potatoes need space to crisp up! }

Ingredients:
2, 6-7 ounce skinless wild salmon fillets 
2-3 medium red potatoes, diced into small 0.5

In a very small bowl add melted butter with minced garlic, chili flakes a pinch of sea salt and pepper. Whisk vigorously to emulsify. On a baking sheet, arrange potatoes in a single layer. Drizzle with half of the garlic butter mixture and toss to get them all coated. Roast in your preheated oven for 8 minutes. Remove the pan from the oven and arrange the salmon in between the potatoes. Brush with the remaining garlic butter mixture. Bake for 10-12 minutes or until salmon is cooked through and flaky. Garnish with fresh chopped parsley and enjoy! Keep refrigerated in air tight glass containers for up to 3 days. I made Igor take these pictures of me. He was contacted later by the police through his license plate & as the registered owner of our vehicle, and was offered two alternatives for ‘trespassing’ near trains:

1. Pay a $350 fine,
2. Attend a meeting with an officer to discuss the risks and fatality rates associated with train accidents. •

We opted for the meeting (he made me come with him). In a nutshell, the officer thought that Igor had a hard-on for trains! “There are annual train conventions you can go to you know” and “what kind of train models do you collect?” were a few of the comments made. Igor repeatedly tried to explain that I was the one who wanted pictures, not him, to no avail! 😂 •

What I put that man through. He still ended up marrying me, so we good. 👏😂
