🌱😍 Mini Hasselback Potatoes! 📷 by @hannah__chia 🚨🚨Recipe: preheat oven to 425F (220C), cut mini potatoes hasselback style (make thin, deep slices, stopping before you get to the bottom— i like to lay a pair of chopsticks at the base of the potato for this purpose), toss with salt and pepper, and bake for 25 minutes. remove from oven and drizzle the fanned-out slices with more olive oil and fresh rosemary/thyme/parsley if desired and roast for another 25-30 minutes until tender and golden brown.

• 1-2tsp curry powder (depends on how much you like)⁣

𝐌𝐞𝐭𝐡𝐨𝐝 ⁣
1. preheat oven to 200C/180C fan/400F/gas 6, line a baking tray with non stick baking parchment.⁣
⁣
2. After draining and rinsing the chickpeas, pat them dry with a clean tea towel, then add them to a bowl.⁣
⁣
3. sprinkle in the curry powder and stir until the curry powder has coated all of the chickpeas.⁣
⁣
4. Bake them in the oven for 15 - 20 minutes , turning them over halfway through cooking time!⁣ .

We love an old standby and we relish in our midwestern roots, but this isn’t the classic church basement potluck fare of yesteryear. This baby is clean, bursting with flavor and full of crunch and color with no bacony mayo-base in sight. A creamy, salty sauce that still manages to be bright and fresh tossed all over this big ol’pile of good-for-you.⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Blend for the dressing:⠀
2/3 cup orange juice⠀
2 tablespoons miso (or soy sauce!)⠀
2 tablespoons almond butter⠀
1 shallot⠀
2 tablespoons canola oil⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Toss dressing with two heads of broccoli (cut into florets), two cups of cabbage, and a big handful each of golden raisins, slivered almonds, and chopped green onions. Eat forever!⠀

Strawberry shortcake by @ellielikes.cooking ❤️

Cake:
1 3/4c all purpose flour
1/4c corn starch
1/8 tsp salt
1/2c + 2 tbsp vegan sugar
1 tsp baking soda
2 tsp baking powder
1/2c almond or cashew butter
1c soy milk
2 tbsp vinegar
2 tsp vanilla
strawberries, sliced

Coco whip:
1 can chilled coconut milk/cream
1 tbsp powdered sugar
1/2 tsp vanilla
.
. 
1. Preheat oven to 350F. Grease a 9” cake pan and set aside.
2. Sift together flour, corn starch, salt, sugar, baking soda, and baking powder.
3. In a separate bowl, mix together nut butter, milk, vinegar, and vanilla.
4. Combine wet ingredients with dry and mix until combined. Pour into cake pan and bake for 35 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
5. To make the coco whip, scoop out the solid portion of the coconut milk (reserve the liquid for smoothies) into a chilled mixing bowl. Add sugar and vanilla to the bowl and whip with a hand/electric mixer until fluffy. Chill in fridge until ready to use (coco whip will firm up more as it cools).
6. Use a serrated knife to cut the cake in half so you have two layers of cake. Frost with coco whip, layer on strawberry slices, and finish with another layer of coco whip. Frost the top of the cake with remaining coco whip and strawberries. Store covered in the fridge. Enjoy!! #bestofvegan (note: the recipe was doubled for this picture to make 4 layers).

🌱Air fryer plantains with chunky guacamole 🌱Vacation cooking has been a lot of fun. My ingredients and gadgets are pretty limited here which means I have to be extra creative. It’s liberating to move beyond my comfort zone. 🌱These plantains I made at home in NYC. I like my plantain slices large and juicy😋. Simply slice very ripe plantains to desired thickness (the thinner, the crispier). (Optional: brush with a little oil but not necessary.) Cook in air fryer at 400F until golden brown, about 15 minutes. 🌱Chunky guacamole: Mash 1 large avocado with a fork into large chunks. Add 1/4 deseeded finely minced jalapeño, 1/4 cup diced tomatoes, 2 tbsp diced red onion, 1 tbsp chopped cilantro, 2 tsp fresh lime juice, salt and black pepper to taste.

🍅🥗Vegetarian Grape Vine Leaves 🍁 🍃 Rolls—-This will Be a NEW Thanksgiving aire!!! 🙌🏼👩🏻‍🌾 —- Our Bellies are happy FuLL! So Yummy!  What do you need to make them?  1. One Jar of Grape Leaves  2. 1 large tomato 🍅 3. Fresh basil leaves and fresh parsley 4. yard cup of lime juice 5. Short grain brown rice ( semi cook in advance) 6. Salt and pepper to taste and minced garlic ( as needed). Add olive oil to the mix about 2-3 TVs—— PREP: Dice fresh ingredients in tiny seize or chunky if you prefer. Prep the leaves by pulling them out of the jar very gently, unfold them and rinse them with water.  Let them dry as you cut the fresh ingredients. Fill them up by using about a TBs into each leaf.  I had to google how to Roll— and it’s super easy to do!! 🤣🤣🤣.
